
For this fresh and delicious dessert, use variegated vanilla ice cream, Pistì pistachio cream, fresh fruit and a homemade waffle.
For the waffle:
Weigh the egg whites. The same weight of the egg whites must also be that of butter, sugar and flour.
Melt the butter in a bain-marie and let it cool.
Meanwhile, beat the egg whites for 5 minutes, adding a spoonful of sugar at a time. Once the sugar is finished, add the butter slowly, still whipping.
Sift the flour and add it to the mixture just obtained, mixing everything with a spatula.
At this point you can proceed with two types of cooking:
with the special waffle iron: heat the plate well. Place a couple of spoonfuls of the mixture in the center and lower the top of the plate to press the batter. Cook the waffles for at least 2 - 3 minutes;
in a hot oven, heated to 200 ° C: line a baking tray with parchment paper. Spread the batter to create a 10 cm diameter disc. Place in the oven and cook for 5-6 minutes.
As soon as the waffles are golden brown, place them still hot on an upside-down glass and press them with your hands so that they take the cup shape. Let them cool and harden at room temperature.
Once the waffles have hardened, turn them upside down and serve the scoops of ice cream inside them. They keep a couple of days in an airtight container.
