Potato pie and Pistachio Pesto

 1 kg potatoes
 1 grilled courgette
 80 g emmental
 1 spoon of Grana Padano
 120 g Pistì pistachio pesto

Prepare all the required ingredients and let's start with the preparation of this delicious pie of potatoes, courgettes and Pistì pistachio pesto.

Boil the potatoes with all the peel in plenty of salted water, then drain and let them cool to room temperature. Once cold, peel them and mash them in a potato masher as if to create a very fine puree. Add salt, Grana Padano and olive oil.

Take the aluminum molds and grease them with oil and add a little breadcrumbs and a part of the potato mixture.

Once the dough has been inserted, in the central part add the grilled courgettes, some emmental cubes and a teaspoon of pistachio pesto. Close the pie with the other potato mixture

Finally bake at 200 degrees for about 20 minutes until they appear golden. As soon as they are ready, turn them upside down on the plates and decorate with pistachio pesto and chopped pistachios.
